Introduction to Food Science &Technology

We need food for our growth, maintenance, and development. The quality of human life depends on the type of food one eats. The aspects of food get changed throughout time with various discoveries and an increase in population.
Classically Food is anything that nourishes our body. It can be solid, liquid, or semi-solid.Food also has two main perspectives, one is Social and another is scientific. Where fold science helps to provide good quality of food to make life better for today’s consumer.

As per concern for the large scale production in today’s fast-moving life, food should be safe to consume. Therefore it should be studied from various perspectives, shown in diagram

  • Food Chemistry – Covers the basic composition, structure, properties & changes that occur in food during processing & utilization.
  • Food Analysis – Deals with the principle method and techniques necessary for qualitative and quantitative analysis of food with the physical and chemical analysis of food and its ingredients.
  • Food Microbiology – The study of microbial ecology regards the food for both spoilage and beneficial use regarding with the environment; physical, chemical and biological destruction in the food due to the microbial activity.
  • Food Processing – Covers the general characteristics of raw food material, preservation, quality, packaging, waste management, and good manufacturing practices.
  • Food Engineering – Involves the study of engineering concepts and unit operations in food processing like thermodynamic, fluid flow, and packaging.
  • Food Additives – Study of ingredients that are intentionally added to food to improve its functional, physical, and sensory properties.
  • Food Fortification – Process whereby nutrients are added to enrich the food and to improve its nutritional quality of the diet, which is carried out by microbes like bacteria, fungus, yeast & molds.
  • Functional food – Functional food provides health benefits beyond the nutrient contribution when they are eaten regularly in adequate amount.
  • Food safety and regulation – Food safety and regulation are related to food sanitation, safety, and hygiene to a food item, public health, and regulations. The Food Safety and Standards Authority of India (FSSAI) has been established under the Food Safety and Standards Act, 2006.
